Apple Rings w/ Salted Butter Caramel Sauce

Lots of calories but still vegan , here is the recipe for the fried apple rings and their salted butter caramel sauce (which is a specialty from the West of France where I was born :-).

Ingredients :

  • 2 Granny apples
  • Groundnut oil
  • Heavy soy cream
  • Salted butter

Batter :

  • (1 cup) Flour
  • (¼ tsp) Baking powder
  • (¼ tsp) Sea salt
  • (½ tsp) Cinnamon
  • (½ tsp) Ginger
  • (2 tbsp) Sugar
  • (1 cup) Soy milk
  • (1 tsp) Apple cidar vinegar

Recipe [Apple Rings] :

  • Heat the groundnut oil in a deep saucepan
  • Set aside a bowl with sugar and cinnamon for coating
  • Mix the batter mixture together until smooth
  • Cut your apples into rings (about 1/5 inch thick) and dip them in the batter
  • Fry until golden brown on each sides
  • Place on paper towels to get the excess oil off
  • Dip in the previous sugar and cinnamon mixture and set aside

Recipe [Salted Caramel Butter] :

  • Heat the cup of sugar ina medium saucepan over medium-heat and stir constantly until melted into a thick brown colored liquid
  • Add the salted butter and stir constantly for 2 to 3 minutes
  • Add 1/2 cup of heavy soy cream while stirring and let it boil for about 2 minutes
  • Remove from heat and stir as you add 1 tsp of salt to your caramel
